1. Wash rice thoroughly until the water runs clear.
2. Bring 1 cup of rice to the boil with 1.25-1.5 cups of water and a little salt.
3. Cover and simmer over low heat for 15-20 minutes.
4. Remove from heat and let rest for 10 minutes.
5. For sushi, season with sushi vinegar and let cool to body temperature.
