Star anise is the dried fruit of the evergreen tree Illicium verum. Its star-shaped shape and intense aroma, which is reminiscent of licorice, are characteristic. In Asian cuisine - especially in China, India and Indonesia - star anise is an integral part of traditional recipes.

🍚 Pilau rice with star anise

Preparation:

  1. Wash and drain 2 cups of basmati rice.
  2. Finely chop 1 onion and fry in a little oil.
  3. Add 1-2 star anise, 1 cinnamon stick, 4 cloves and 2 green cardamom pods and roast briefly.
  4. Add the rice and pour in 4 cups of water. Season with salt.
  5. Bring to the boil, then cover and cook over low heat for 15 minutes.
  6. Remove star anise and other spices before serving.

🍗 Chinese Five Spice Chicken

Preparation:

  1. Rub chicken thighs with a marinade made from soy sauce, honey, garlic, ginger and ground star anise (alternatively five-spice powder).
  2. Marinate in the refrigerator for at least 1 hour (better overnight).
  3. Bake in a preheated oven at 200°C for about 40 minutes until the skin is crispy.
  4. Serve with rice and steamed vegetables.
