What is Black Cardamom?
Black cardamom, also known as "Badi Elaichi", is a strongly aromatic spice with a smoky, resinous and slightly camphorous note. It usually comes from India or Nepal and differs greatly from green cardamom in its more intense, heartier taste. Due to its dominant aroma, it is only used sparingly and usually whole.

Use in the kitchen:

🍛 Lamb curry with black cardamom

Preparation:

  1. Fry 500g lamb with onions, garlic, ginger and tomatoes.
  2. Add 3 black cardamom pods, 2 bay leaves and spices (e.g. cumin, coriander, turmeric).
  3. Fill with water and simmer for about 1.5 hours.
  4. Before serving, remove the capsules and serve with rice or naan.

🔥 Tandoori chicken with garam masala

Preparation:

  1. Marinate chicken pieces with yogurt, lemon juice, garlic, ginger and tandoori spice (including ground black cardamom).
  2. Let it steep for at least 4 hours, ideally overnight.
  3. Cook or grill in the oven at 200°C for approx. 30-40 minutes.
  4. Serve with fresh coriander and lemon wedges.
