🥄 Tom Kha Gai (Thai coconut soup)
Preparation:
- Heat 400 ml coconut milk with 200 ml water in a saucepan.
- Add 1 tbsp chopped THAI PRIDE galangal, 2 crushed lemongrass stalks and 3 kaffir lime leaves.
- Add 150 g chicken (thinly sliced) and simmer for about 8 minutes.
- Season with fish sauce, lime juice and fresh chilies. Add mushrooms if desired.
- Serve hot and garnish with coriander.
🍛 Green Thai curry with vegetables
Preparation:
- Fry 2 tablespoons of green curry paste in a little oil.
- Add 1 tablespoon chopped galangal and fry briefly.
- Stir in 400 ml coconut milk and bring to the boil.
- Add vegetables of your choice (e.g. eggplant, zucchini, peppers) and simmer for about 10 minutes.
- Season with soy sauce and lime juice. Serve with fresh Thai basil.
