🥄 Mapo Tofu with fermented black beans
Ingredients:
- 200 g tofu (firm)
- 1 tbsp Silver Swan Salted Black Beans (rinsed)
- 2 tbsp chili paste
- 2 spring onions
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 100 ml vegetable broth
- 1 clove of garlic
- Ginger to taste
Preparation:
- Cut the tofu into cubes and set aside.
- Finely chop the garlic, ginger and spring onions.
- Mash the fermented black beans lightly with a fork.
- Heat some oil in a pan and fry the garlic, ginger and black beans.
- Add the chili paste and fry briefly.
- Add the tofu and deglaze with soy sauce and vegetable broth.
- Dissolve the cornstarch in a little water, add it and let it boil down.
- Garnish with spring onions and sesame oil and serve.
🐟 Steamed fish with black bean sauce
Ingredients:
- 1 whole fish (e.g. sea bream or tilapia)
- 2 tbsp Silver Swan Salted Black Beans (rinsed)
- 2 cloves of garlic
- 1 tsp ginger (grated)
- 2 tbsp soy sauce
- 1 tbsp rice wine
- 1 tsp sesame oil
- Spring onions for decoration
Preparation:
- Clean the fish thoroughly and place it in a heatproof bowl.
- Finely chop the garlic and ginger and lightly crush the black beans.
- Mix soy sauce, rice wine and sesame oil.
- Pour the spice mixture over the fish and let it marinate for about 20 minutes.
- Steam the fish over steam for 15-20 minutes.
- Garnish with spring onions and serve.
