What is Gochugaru?
Gochugaru is a traditional Korean chili powder made from dried red chili peppers. It is characterized by a fruity, spicy spice and an intense color. Gochugaru is essential for making kimchi – the world-famous fermented vegetable dish from Korea – and is also used in many other Korean recipes.

🥬 Classic kimchi with Chinese cabbage

Preparation:

  1. Quarter the Chinese cabbage, sprinkle with salt and let it sit for 2-3 hours. Then rinse thoroughly.
  2. Make a marinade with gochugaru, garlic, ginger, fish sauce, sugar and finely grated apple.
  3. Massage the marinade thoroughly into the cabbage leaves.
  4. Pour into an airtight container and let ferment at room temperature for 1-2 days. Then store in a cool place.

🍢 Gochugaru tofu marinade

Preparation:

  1. Cut tofu into cubes and press lightly.
  2. Mix a marinade of soy sauce, sesame oil, gochugaru, garlic and maple syrup.
  3. Place the tofu in it for at least 30 minutes.
  4. Fry in the pan or bake in the oven - ideal with rice or salad.

🍲 Korean kimchi jjigae stew

Preparation:

  1. Heat some oil and fry onions and kimchi.
  2. Deglaze with water or broth, add gochugaru and tofu.
  3. Let simmer for 10-15 minutes. Garnish with spring onions and sesame seeds.
