Cao Guo, also known as black cardamom, is an aromatic spice with a slightly smoky note. In Chinese and Southeast Asian cuisine it is an indispensable ingredient in spicy meat and soup dishes. Its intense essential oils give dishes depth and an unmistakable aroma.

Preparation:
- Cut 500 g lamb into cubes and fry with onions and garlic.
- Add 2-3 dried cardamom fruits (cao guo) and roast briefly.
- Pour in broth, add vegetables of your choice and let simmer for about 1.5 hours.
- Season with salt, pepper and herbs.
🍲 Chinese herbal soup with Cao Guo
Preparation:
- Bring 1 liter of water to the boil with 2-3 Cao Guo, ginger, spring onions, goji berries and chicken.
- Simmer gently for 30-40 minutes.
- Season with soy sauce and serve hot.
