🥗 Mung bean salad with lemon dressing
Preparation:
- Soak 150 g mung beans overnight and cook for about 30 minutes.
- Allow to cool and mix with diced cucumber, tomato, onion and fresh coriander.
- For the dressing, mix 2 tablespoons of olive oil, lemon juice, salt and pepper and pour over the salad.
🍲 Mung bean soup with glass noodles
Preparation:
- Soak 150g mung beans and cook for 30 minutes.
- In a separate pot, saute onions, garlic and ginger.
- Deglaze with vegetable broth, add mung beans and soaked glass noodles.
- Season to taste with soy sauce, sesame oil and spring onions.
🌱 Grow your own sprouts
Instructions:
- Wash mung beans thoroughly and soak in water for 8-12 hours.
- Place in a germination jar or sieve, rinse daily and store in a dark place.
- After 3-5 days the sprouts are ready to eat.
