Bring 750 ml of water or unsalted chicken/beef stock with the paste and coarsely chopped onion to the boil in a pot and simmer for 5 minutes.
Add meat, bring to the boil, remove and set aside.
Arrange the meat in a bowl with cooked rice noodles, pour soup over it and garnish with bean sprouts, basil, lime and optionally chili.

Preparation:
