The Tremella mushroom - also known as snow mushroom or silver ear - is one of the most popular ingredients in traditional Chinese cuisine and medicine. Preparation:

  1. Soak 50 g of dried tremella mushroom in warm water for 1 hour, then wash and chop thoroughly.
  2. Bring 1 liter of water to the boil with 10 pitted red dates and 1 tablespoon of rock sugar.
  3. Simmer on low heat until mushroom is soft and gel-like, about 30 minutes.
  4. Serve warm or chilled.

🥣 Tremella soup with goji berries and lotus

Preparation:

  1. Soak 50 g dried white mushroom for 1 hour, clean thoroughly and chop roughly.
  2. Bring to the boil with 1 tablespoon of dried goji berries, 1 handful of lotus seeds and 1.2 liters of water.
  3. Simmer over medium heat for about 45 minutes.
  4. Refine with a little honey or agave syrup and serve warm.
