Preparation:

  1. Prepare rice noodles as usual and set aside.
  2. Bring 500 ml of water to the boil in a pot with some fresh lemongrass, galangal, lime leaves and chili.
  3. Add shrimp and cook for 2-3 minutes.
  4. Put the rice noodles in a bowl, pour the soup over them and refine with lime juice and coriander.
