Preparation:
- Prepare rice noodles as usual and set aside.
- Bring 500 ml of water to the boil in a pot with some fresh lemongrass, galangal, lime leaves and chili.

- Put the rice noodles in a bowl, pour the soup over them and refine with lime juice and coriander.
