What is Shiro Miso?
Shiro Miso, also known as "white miso", is a mildly fermented soy paste with a high proportion of rice and a comparatively low salt content. It is often used in everyday Japanese cuisine - especially for miso soups, but also for dressings, marinades and dips.

🍜 Miso ramen with tofu and spring onions
Preparation:
- Heat 200 ml water and stir in 1.5 tbsp miso paste.
- Cut the tofu into cubes and fry briefly in sesame oil.
- Boil the ramen noodles, drain them and add them to the broth.
- Garnish with tofu and sliced green onions.
🍆 Baked eggplants with miso marinade
Preparation:
- Halve 1 eggplant lengthwise and make diamond-shaped cuts.
- Mix the marinade from 1 tbsp miso paste, 1 tsp sesame oil, 1 tsp honey and 1 tsp rice vinegar.
- Brush the eggplant with the paste and bake in the oven at 200°C for about 25 minutes.
- Sprinkle with sesame seeds and serve.
