🍣 Sushi rice with CJW brown rice vinegar
Preparation:
- Wash 250 g of sushi rice thoroughly and cook with 330 ml of water.
- After cooking, let it rest covered for 10 minutes.
- Mix 3 tablespoons of CJW brown rice vinegar with 1 tablespoon of sugar and 1 teaspoon of salt.
- Gently fold the mixture into the rice and allow to cool.
- Use for nigiri, maki or temaki.
🥗 Asian dressing with rice vinegar
Preparation:
- Mix 2 tablespoons CJW brown rice vinegar, 2 tablespoons soy sauce, 1 teaspoon sesame oil and 1 teaspoon honey in a bowl.
- Refine with freshly grated ginger and sesame.
- Pour over salad or steamed vegetables.
🥒 Korean-style pickled vegetables
Preparation:
- Cut cucumber, carrot or radish into fine strips.
- Pour over a mixture of 100 ml CJW brown rice vinegar, 1 tbsp sugar and ½ tsp salt.
- Let it steep for at least 1 hour, ideally overnight.
